Fes is Morocco's spiritual and intellectual capital — founded in 789 AD, home to the world's oldest continuously operating university (Al Quaraouiyine, 859 AD) and to a UNESCO World Heritage medina that is the largest car-free urban area on Earth. With 9,000 narrow alleys, hidden riads, working tanneries, fondouks (caravan inns), madrasas and zaouias, Fes is the destination for travellers who want to step furthest from modern life.

The imperial medina, Fes el Bali, dates from the 9th century and is the most authentic of Morocco's old cities — the Marinid madrasas (Al Attarine, Bou Inania), the Nejjarine fondouk and museum, the Chouara leather tanneries and the great green-tiled minaret of Al Quaraouiyine are all unchanged in centuries. Fes el Jdid, the 13th-century 'new town', holds the royal palace and the historic mellah (Jewish quarter). Outside the walls, the French-built Ville Nouvelle and the panoramic Borj Sud and Borj Nord viewpoints round out a city that easily fills two or three days.

Fes is also a craft capital — the city is famous for its leather, ceramics (the distinctive Fes blue), brass, copper and wood inlay. Cooking classes, Sufi music evenings, hammam rituals and guided medina walks with a licensed Mohamed are essential local experiences.

Fes–Saïss Airport (FEZ) is 15 km south of the medina with direct flights from Paris, Marseille, Madrid and several other European cities. The high-speed Al Boraq train does not yet reach Fes — the conventional train to Casablanca takes 3h 30m, to Rabat 2h 15m. Most travellers arrive by air or by private intercity transfer.
